I've told you about my cockamamie dream to own a Montana bar or restaurant many times. Most recently, my ridiculous infatuation about getting into the hospitality business was focused on the historic, 1908 Graves Hotel/restaurant/bar in Harlowton that's currently on the market.

Another exciting restaurant opportunity came to my attention today. This time, it's not located in a tiny town ninety-two miles from Billings. In fact, it's positioned in one of the busiest areas in the Magic City.

Bullman's Pizza is for sale.

Longtime residents have watched Shiloh Crossing and the surrounding area explode into the hottest retail neighborhood in Billings. A gigantic Scheels is an anchor store, and other big brands and local shops occupy the shopping center at the corner of King Ave W and Shiloh Road. The latest under-construction project at Shiloh Crossing is a Les Schwab tire center (right in front of Scheels), and most of the remaining vacant lots seem to be filling up fast.

Bullman's was born in Helena.

According to the company's About Us page, Bullman's Wood Fired Pizza was founded by two Helena families in 2006. Locations later opened in Bozeman, Billings, Kalispell and Coeur d'Alene. Everything from the decor to their sauces was designed and developed from scratch. Bullman's uses traditional wood-fired ovens that reach temps of 800 degrees. They wrote,

Baking in a wood fired oven produces a crisp, slightly chewy crust with just a hint of smoky goodness. There is no other way to bake a pizza and get this type of result.

The crust is a big thing for me when it comes to pizza, and this style is one of my favorites.
