
Billings’ New Doc Holliday’s Restaurant is Now Open
The wait is over for fans who have anticipating the opening of a new-to-Billings restaurant called Doc Holliday's Roadhouse. It opens at 11 AM today (January 28), according to social media chatter. The establishment occupies the former Gusick's restaurant building at 760 S 20th St W, across from the West End Perkins.

I stopped by yesterday to poke around a little bit, hoping to catch a manager who could provide some details and give me a little sneak peek. When I pulled into the lot, I could barely find a place to park. It turns out, they were conducting employee training.
Not wanting to interrupt, I didn't go inside.
A last-minute scramble before the doors open to the public.
Workers were buzzing around the site, finishing last-minute punchlist items, including replacing the old Gusick's sign. Passing by, it's impossible to miss a large collection of bison and Native American sculptures that surround the exterior.

Doc Holliday's Roadhouse is based out of Williston, ND. The company currently has one other location in Galveston, TX, and its website teases another "coming soon" location in Des Moines, IA.
I was discussing the restaurant earlier this week with my co-worker, Andy, who travels to Williston every once in a while for broadcast engineering projects. He's been to the Williston Doc Holliday's twice.

He described the food as "good" and commented on the fun decor inside. Think: similar to Cracker Barrel or Applebee's, only a little more blue-collar with a somewhat Western-kitsch theme. Your eyes will catch hundreds of unique items, knick-knacks, collectibles, and vintage stuff covering the walls and ceiling,
What kind of food to expect at Doc Holliday's Roadhouse?
Browsing the restaurant's online menu, you'll find a large selection of burgers, steaks, sandwiches, salads, and pizzas. They also offer a handful of seafood & fish entrees, and a full bar. Some fun standouts that caught my eye include:
- Redneck Eggrolls
- Mac and Cheese Nachos
- Corn Casserole (available as a side dish)
- Bailey's Bread Pudding (dessert)
Most of the entrees range in price from roughly $20 to $30. Their 12-and-under kids' menu has seven items for $9.99 (add $3 for the kids' steak meal). Happy Hour is 3 - 6 PM, Monday - Friday, with several attractive food and drink specials.
I'm excited to try Billings' Doc Holliday's Roadhouse, although I typically like to wait a few weeks after a new restaurant opens, for two reasons: Crowds and long wait times aren't my favorite thing, and I like giving staff a little time to get into their groove before checking it out.
