One blessing from growing up and going to school in small town Montana is biking home for lunch.  Mom had something tasty waiting for me when I arrived, like a grilled cheese sandwich or chicken noodle soup.  One favorite took just macaroni and cheese then added sliced hot dog into it.  It became a plate of Heaven for a kid.

The recipe for this indulgence is so simple, even this old bachelor can still fix it.  Since most mac & cheese is made from a box, just follow the directions (yes Men, follow the directions).  While doing that, boil a hot dog or two in a pan of water.

When the mac & cheese is prepared, let it stay warm in the saucepan on low heat.  Fish out the hot dogs and slice them on a little plate.

You can already guess the next step.  Dump the sliced hot dog into the mac & cheese then mix thoroughly, coating each wiener piece in cheesy goodness.

As a kid, we probably just ate up regular American cheese flavored mac.  As adults we should level up the dish.  This night I used white cheddar.

Nutritional Value: WHO CARES?!  This is comfort food.  It has some protein from the franks, some carbs from the pasta, some fat from the butter and cheese.  For those of you on a diet, this is a cheat (there, I've said it).  If you must have a veggie, throw in some fresh or frozen carrots and peas, you rabbit.

If this article accomplishes nothing more, may it give you a dinner idea the kids will love and devour.

Fixing this and then eating it took me back to childhood, to a simple break among the classes.

Thanks Mom, for the lunchtime happiness.
